Pumpkin is one of the best vegetables that you can use to whip up a tasty soup, and you will find that nothing warms your children’s bellies on a cold day like a bowl of creamy pumpkin soup can. Pumpkin is a tasty vegetable that is slightly sweet, and thus the creamy soup you make will have the perfect combination of sweet and savory flavors. If you are looking for the best dish to prepare for your family on a cold winter day, look no further. The creamy pumpkin soup is one that is guaranteed to be an instant success with your family, and you will find that there will be no leftovers when serving this soup.
The following soup recipe is one that is fairly easy to follow, as it simply calls for pumpkin to be cooked in chicken broth. The chicken broth adds a savory taste to the slightly sweet soup, and you will find that a bit of low-fat milk will make it creamy without being too high in fat. Adding some onions and garlic to the mix will serve to further enhance the flavors of the soup, and it will be complete once you drop in the salt, pepper, and red chili pepper. Adding milk and cream to the soup ensures that it is creamy, and a pinch of nutmeg is always required when preparing any pumpkin dish. You can garnish the soup with a few slices of red peppers and dried pumpkin seeds to make it a decorative and festive soup.
The best thing about making this soup is that you can finally figure out what to do with all that leftover pumpkin. Seeing as you, like most other households, bought a pumpkin or three for Halloween, you will find that this soup saves you from having to make pumpkin pie in order to avoid wasting the pumpkin. This recipe is much easier than preparing pumpkin pie, and it is guaranteed to be nearly as much of a success. Obviously no soup can compare to a slice of homemade pumpkin pie, but it cannot hurt to diversify your dinners with this delicious soup.
Ingredients -
1 large pumpkin
1 quart of chicken broth
3 cups of milk
1 cup of heavy cream
Nutmeg
1 large onion
5 cloves of garlic
Red chili pepper
Salt and pepper, to taste
Preparation:
To begin, cut the rind from the meat of the pumpkin and scoop the seeds out from the inside.
Chop the pumpkin into small pieces, and place them in a pot to boil with the chicken broth. Let the pumpkin cook until it is fairly soft, and use a stick blender or food processer to puree it.
Once the pumpkin is pureed, add the milk to the soup and return it to the stove to heat.
In a skillet on the side, heat a spoonful of olive oil. Dice the garlic and onions, and fry them in the olive oil until golden brown. Add the browned onions and garlic to the soup.
Add the pinch of nutmeg, chili pepper, salt, and pepper as desired, and let the pumpkin soup cook for 30 minutes.
Just before serving the soup, stir in the heavy cream and let the soup sit on the stove with the fire off for 5 minutes before ladling into individual bowls.
