Nicely Spiced White Pumpkin Soup with Chili

Ingredients -

1 ½ cups cooked brown rice
1 cup chopped onion
½ cup cooked wild rice
4 ½ cups chicken broth
2 tablespoons butter
¾ lb fresh pumpkin, diced
¼ lb carrots, diced
½ cup heavy cream
⅛ teaspoon white pepper
2 tablespoons finely chopped fresh parsley, to garnish

Preparation:

Cook the rice according to the directions on the pack.

Melt the butter in a big pot, then add the onion and cook until golden.

Stir in the pumpkin, carrots, and broth. Cook for 15 minutes, stirring every 5 minutes.

Add the white pepper and cooked rice and cook for another 10 minutes.

Stir in the cream and bring the pumpkin soup to a boil.

Serve the soup in individual bowls with the parsley sprinkled over the top.
