Mediterranean Style Pumpkin Soup Recipe

This delicious pumpkin soup recipe combines pan fried pumpkin with Mediterranean vegetable flavors and a selection of spices for a smooth and elegant result. This classic pumpkin soup is bursting with fresh flavors and it is easy to make, even if you are not a seasoned chef. You simply cook the vegetables, add the liquid, and puree the pumpkin soup to make it smooth and velvety at the end. You can serve it with sesame crackers, another type of crackers, or some crusty bread for sopping up every last drop.

As with other pumpkin soup recipes, you can alter the vegetables in this one if you have some other vegetables to use up. Broccoli, cauliflower, peas, and zucchini are all good and, as long as you make sure the vegetables are all tender before pureeing the soup, the results will be nice. Pumpkin Soup Recipe with Mediterranean Vegetables

Ingredients -

4 cups pumpkin, chopped
½ cup leeks, sliced
1 red onion, finely chopped
2 tablespoons olive oil
2 ½ cups vegetable broth
1 teaspoon tomato puree
1 canned, roasted red bell pepper
2 cloves garlic, finely chopped
1 teaspoon ground ginger
1 teaspoon cumin
½ cup light cream plus more to garnish
Freshly ground nutmeg, to taste
Salt and black pepper, to taste
Fresh parsley, to garnish
16 sesame crackers

Preparation:

Heat a pot over a medium heat and add some of the olive oil.

Add the pumpkin and leeks and let them sweat for about 20 minutes or until tender. Add the tomato puree and puree the mixture together with the roasted bell pepper.

Cook the onion and garlic in the remaining olive oil.

When soft, add the pumpkin and broth.

Stir and simmer for half an hour, then blend everything in a food processor or blender until the pumpkin soup is creamy and smooth.

Taste it and adjust the seasoning.

Add the ginger, nutmeg and cumin, then stir in the cream and warm the soup through.

Garnish with more cream and some parsley and serve the sesame crackers on the side.
