Easy Pumpkin Soup Recipe with Fish Sauce

Ingredients -

14 oz can coconut milk
1 cup pumpkin puree
2 teaspoons Thai red curry paste
1 teaspoon fish sauce

Preparation:

Heat a pan and add the thick coconut milk from the top of the can.

Pour in the red curry paste and sauté the pumpkin soup for three minutes, stirring it all the time. Add the pumpkin puree and the rest of the coconut milk, and then add the fish sauce.

Bring the soup to a boil and serve it.

You can top this soup with roasted pumpkin seeds and a dollop of sour cream or heavy cream if you like.
