Curried Pumpkin and Apple Soup with Maple Syrup

This wonderful pumpkin and apple soup makes a great first course at Thanksgiving or a fantastic main event at dinner on a chilly night. The curry adds a subtle exotic flavor and the honey, apple, and maple syrup add a mouthwatering sweetness, which will please any fine food lover.

The sour cream and chopped chives is an optional step for this pumpkin and apple soup but it does finish the dish off nicely. You might need to adjust the balance of maple syrup and salt at the end, so you have a pleasing mixture of sweetness and saltiness in the finished dish. This pumpkin soup recipe is sweet and savory, rather than one or the other.

Pumpkin Soup Recipe with Crab and Corn

Ingredients -

1 cup chopped onion
1 cup chopped celery
2 tablespoons butter
⅓ cup heavy cream
1 bay leaf
¼ teaspoon salt, plus more to taste
2 teaspoons mild curry powder
½ large apple, peeled, cored and chopped
3 cups chicken broth
1 ½ cups cooked, mashed pumpkin or canned pumpkin
2 tablespoons maple syrup or honey
Chives and sour cream for garnish (optional)

Preparation:

Melt the butter in a soup pot, and then stir in the celery, apple, and onion.

Cover the pot partially and let the ingredients sauté over a medium high heat for about 8 minutes or until the onion is clear. Add the curry powder and cook for 1 minute. Add 1 cup of chicken broth and cook for 1 more minute.

Puree the contents of the pan in a food processor or blender, adding the pumpkin and pureeing it until the pumpkin soup is smooth.

Pour everything back in the pot and stir in the salt, the rest of the pumpkin broth and the bay leaf.

Bring the soup to a simmer, stirring it every few minutes. Stir in the cream after 5 minutes and the maple syrup or honey.

Taste the soup and add more maple syrup or salt, depending on what is needed.

Simmer it for a couple of minutes, then take it off the heat and serve hot.

Garnish each bowl with a dollop of sour cream and some chopped chives if you want to.
