Grilled Pumpkin Soup with Carrot

This grilled pumpkin soup recipe has parsley, which brings out the savory pumpkin, onion, and carrot flavor and contrasts well with their sweet grilled flavor. The cream thickens the soup up and is a good garnish too and you can use fresh parsley as a tasty looking garnish to finish the soup off.

Juicy Grilled Pumpkin Soup with White Wine

Ingredients -

3 lbs pumpkin
1 carrot, peeled and cut into 4 pieces
1 cup light cream, plus more to garnish
2 tablespoons melted butter
˝ onion, sliced
2 cups chicken broth
Salt and black pepper, to taste
Cilantro, to garnish

Preparation:

Preheat the grill to medium. Slice the top off the pumpkin, remove the seeds and stringy mass, and put the top back on.

Grill it over an indirect heat for an hour or 2 or until the pumpkin is tender.

Wipe half the butter over the carrot pieces 20 minutes before the end of the cooking time and grill them until they are tender and slightly charred. Scoop the flesh out of the pumpkin.

Sauté the onion in the rest of the butter until it is soft, then add the wine and cook for 10 minutes over a medium heat.

Add the pumpkin flesh and broth and simmer for 15 minutes.

Puree the soup in a blender or food processor, in batches, and then add the cream, along with some salt and pepper.

Divide the soup between 6 serving bowls and top each one with a dollop of cream and some fresh parsley.
