Gluten Free Recipe Black Bean and Pumpkin Soup

This no gluten pumpkin soup recipe is simple to make and you can adjust the chili and seasonings if you prefer something milder in flavor. The coconut milk in this recipe is optional but it does add a lovely creaminess to the pumpkin soup.

This is not a pureed pumpkin soup recipe, so dice the potatoes and pumpkin nice and small. This makes them cook faster and they are better like that in the soup. This pumpkin soup is very healthy. No Gluten Pumpkin Soup Recipe with Black Beans

Ingredients -

1 roasted green chili pepper, banana pepper or Anaheim pepper, seeded and diced
1 tablespoon olive oil
1 jalapeño pepper, seeded and diced
5 red potatoes, peeled and diced
15 oz can black beans, rinsed and drained
15 oz can pumpkin
4 cups gluten free vegetable bouillon
½ teaspoon ground cumin
Pinch of ground chipotle pepper or ground cumin
½ teaspoon Old Bay seasoning
1 tablespoon fresh chopped cilantro
1 teaspoon honey
4 cloves of garlic, minced
Dash of coconut milk (optional)
Fresh lime juice, to taste
Salt and freshly ground black pepper, to taste
Chopped fresh cilantro and lime slices, to serve

Preparation:

Heat the oil in a big pot and toss in the spices and diced peppers.

Stir everything well and let it gently cook for 2 minutes.

Add the garlic and stir.

Add everything else except the seasoning, fresh cilantro, coconut milk, lime slices, and bring the soup to a fast simmer.

Cover it, turn the heat down and let it simmer gently for 25 minutes or until the potatoes are soft.

Adjust the seasoning and add a bit of coconut milk if you like, for creaminess.

Warm the soup through and serve it with a slice of lime and some fresh cilantro.
